Preparation
Conventional (20 minutes)
1 PLACE the cucumber slices in a bowl, and sprinkle the salt over them. Leave
for 10-15 minutes.
2 POUR off any excess liquid, and drain the cucumber thoroughly, rinsing with cold water to remove most of the salt.
3 SPRINKLE the cucumber with the mint.
Then stir in the yoghurt until the cucumber slices are evenly covered.
Serve with chicken satay or curries.

• The refreshing yoghurt mixture of raita creates a cooling contrast to a highly flavoured main dish.

1 long cucumber, peeled and finely sliced
1 tsp salt
1 tbsp chopped mint
200 g low-fat yoghurt
