Preparation

Place evenly shaped fish on a microwave safe dinner plate and season with pepper and a little lemon juice.
Cover with sliced tomato and top with lemon slices. Cover with microwave safe plastic wrap and Zap on MEDIUM HIGH (80%) for 2 ½ minutes.
Stand for ½ minute, uncover and sprinkle with parmesan and garnish with parsley to serve with lightly steamed zucchini strips. Fish tips pages 37 – 39 in ‘ZAP TO THE MAX’. Vegetable chart page 85 in ‘ZAP TO THE MAX’

200g fresh fish, eg Rockling
freshly ground black pepper
2 thin slices of tomato
2 – 3 thin slices of lemon and juice
freshly grated parmesan and torn parsley to serve
