Ingredients
- 200g firm white fish fillet eg Rockling, John Dory
- Good quality ready- made Mayonnaise
- 1 heaped teaspoon capers
- Fresh dill sprigs or chopped flat leaf parsley
- 20-25 cm sheet of baking paper
- Freshly ground pepper
- Lemon wedges
Serves 1
Preparation
- Step1 Place fish fillet in the centre of the baking paper. Top with a dollop of mayonnaise and add capers.
- Step 2 Bring the horizontal paper edges together. Fold over the seasoned fish, and then tuck in the ends under the fillet to make a parcel.
- Step 3 Place the parcel off centre on microwave turntable. Using a 800 Watt oven microwave on High (100%) for 2 minutes Stand for 2 minutes.
- Step 4 Unwrap the parcel carefully. Lift the fillet onto a warm plate and spoon over fish liquid. Sprinkle with extra choice of herbs. Garnish with a few twists of pepper and lemon wedge. Serve with a mixed lettuce, tomato and cucumber salad, or, lightly cooked green beans or asparagus.
